I swung by for a knife sharpening course and I learned a ton! I already had some experience with sharpening on stones but this really helped me dial in my skills.The owner, Craig, is the man! He is very knowledgeable and helpful. He recommended me the Takamura R2 Gyuto and I have been LOVING IT.This knife is the sharpest knife I have ever handled, its beautiful and Craig put a nice microbevel on it, at my request.I absolutely love this shop. Thanks guys, Ill be back for more knives!!
I stopped by this beautiful shop during a weekend trip to Denver and I cannot stress how cool of a place this is. The sheer amount of beautiful knives from incredible Japanese makers alone can have one with the smallest of interest in Japanese knives feeling like a kid in a candy store. Craig was an excellent host and patiently humored all of my questions/requests. From personal relationships with the makers to local partnerships for other food/restaurant gear, this little shop has quite the recipe for an amazing local shop. I planned on just quickly dropping off a few of my knives for their whetstone sharpening service. I didnt plan on adding another knife to my collection, but I just had to. The place was too cool, the staff too kind, and my self control too thin. I havent decided whether I moreso envy people who live close enough to enjoy this place often or fear the consequences it would have on my wallet if I did. All in all, go here. Just do it.
Had been dreaming of shopping here for years after following their Instagram account. Finally got the chance. Dropped too much money on beautiful knives 😂. They helped me so much and were so friendly to talk with. The store is sleek and clean. Their selection of knives is so unique, yet diverse. I don’t think you could easily find a place in Japan that has such a collection from famous knife makers like here. You guys are awesome.
Took my grandfather’s deba to get cleaned up [mostly wanted red rust removed for preservation] they were very respectful and did a great job always keeping me informed and making sure they did exactly what I wanted. They have an extensive knife collection and a knowledgeable staff.
I have developed a small addiction to Japanese knives, and its dangerous to be living in Denver and so close to the Carbon Knife Co. If you live in Colorado its worth a trip into their shop. The staff is super knowledeable and passionate about the knives, and its easy to spend hours in the store just trying knives and chatting. Its a must visit place if you want high-end knives. There is a reason why almost every review is 5 stars. Do yourself a favor and drop by!

Always quick to respond and is a wealth of knowledge. He has gone above and beyond in customer service - I will definitely fulfilling my future needs with this business. Wow, thank you, Carbon Knife Co! I got my spouse a gift certificate to Carbon (love that they have gift certificates) but he wasnt sure what to purchase online. I called the store for guidance and they were so friendly and patient. They texted me a bunch of helpful info and recommendations. The knives we ended up getting are gorgeous and work incredibly well. Ill definitely be going here / shopping online here for any future high-quality knife needs

After a lot of researching i was about to order some knives online but decided i wanted to hold them and see some on person, so we stopped into carbon knife co. and i’m so glad we did! the selection was vast and beautiful and holding each knife in your hand is very necessary. james answered all of our many many questions, took his time showing us a variety of knives in each style we wanted, and explained the differences in detail. i intended to only browse but ended up leaving with 4 knives that are a dream in the kitchen. lastly the prices are very reasonable compared to the brands you’ll see en masse online, i felt like i was getting a deal. i will be back to browse the other kitchen items they have and hopefully attend a knife sharpening class. highly recommend...get your knives here!
This place is awesome!! If you enjoy cooking at all, there’s something here for you. I came in looking specifically for a carbon steel knife but I don’t know much about them. The owner walked me through all the things to look for, showed me several options at different price points, and walked me through care and maintenance. I was also able to find a really good microplane.I’d say this place is worth checking out even if you don’t need anything specific.I really appreciated that they had so many options in the cheaper range of knives. Normally specialty shops are kinda snotty and push you into expensive stuff but this wasn’t my experience here.

I didnt want to order a honing stone from overseas and deal with waiting, and any technical difficulties that could arise, so I googled Denver Honing Stone, and this wonderful place showed up as the first result. They sell 12000 grit honing stones, along with Opinels and Higonokami knives, which I wasnt expecting. Whether youre a professional chef, or someone looking to hone their straight razor, or someone just interested in excellent Japanese cutlery (although the Opinels are French), then this is a place you have to check out. Im very pleased that Ive discovered this place, and will return with any of my cutlery needs. Oh! And the first sharpening of the knives you buy from them is free.

Craig and Tina always take care of me, and my tools I use as a chef. They know my name and what kind of knife I use. They always welcome me in, and ask how everything is going. The best experience Ive ever had when shopping for kitchen equipment! I went in to buy 2 knives and spent about 20 minutes trying out different handles, styles, everything. The staff is incredibly knowledgeable and all used to be chefs! Ended up buying a nakiri and petty knife that I cant wait to use. On top of that, although the selection for other kitchen items is limited, you dont need much when everything is top quality. Literally most of the items I have already bought elsewhere (bowls, thermometers, whisks) or want to buy. Amazing experience, cant wait to shop here again!

This place is as wonderful as everyone says it is. I went in to get a knife for my husband (chef). The space itself is absolutely beautiful- clean and classy and filled with anything a chef could want. They have a great selection of cookbooks (Central! Boragó!), pasta accessories, and of course, many exquisite Japanese knives from many incredible knife makers. It looks like the kind of place where theyd be very snotty to you, but it was exactly the opposite! I called on Dec. 23rd to ask if they were perhaps open in the 24th (probably not) but a lovely woman told me that Yes, they were open from 10-2! I had planned to purchase a knife for about $150-200 for my husband but immediately felt insecure as I overhear the guy in front of me deciding between two knives valued at over $1000. I thought that the sales person would feel they were wasting their time with me, who knew nothing and had a small budget. I told the woman I would just like to purchase a gift card. She was SO INCREDIBLY nice and helpful and efficient (with about 5 other people in the store). I (quietly) asked if $200 was enough to get a nice knife and she warmly reassured me that it was a very generous amount and that they have many wonderful knives in that price range. She then offered to give me and empty knife box to place the gift card in so it would be easier to wrap. A very thoughtful touch. I returned a few days later with my husband to purchase a knife - again the same woman (Tina, according to Google) took care of my husband - patiently explaining the various knife makers and their approaches, and educating him about the many choices, answering questions in the warmest, least snooty manner. We ended up getting 2 knives, some scissors and a French can opener, spending more than the card because it was such an enjoyable experience. Such a pleasure to support this business!

This place is awesome! I took my knives in to be sharpened, and the staff was wonderfully helpful and knowledgeable about their trade. When I got my knives back, they were razor sharp! I will definitely be returning to Carbon Knives the next time I need something sharpened or if I am in the market for some new cutlery.

This place is a chef/cooks wonderland. Carbon has a wide selection of great quality manufactured and handcrafted knives and tools, sold by the friendliest two people Ive ever purchased anything from. Not to mention, they always recognize my girlfriend and I. Very awesome place the people their were very helpful in showing the selection of stone sharpening I should be using for my knives. As well as they showed me other knives I was looking for later down the road I will go back in to buy. And the guy mentioned how much it would be and take to sharpen a knive I mainly use for my one job so I will be coming back Monday to drop it off. But awesome selection very helpful I would recommend any chef to come and give this place a very good look and also ask questions if needed. The owners were so friendly and welcoming as soon as we walked in. Were very new to the knife world and this was our first big purchase. Were not in the industry, we just really like food. Craig spent about half an hour going through our options with us - he was very attentive to our budget and needs. He was so excited to show us a custom handle Gyuto that we ended up falling in love with. Tina was also so helpful with picking out a cookbook and cutting board. These two are extremely knowledgable in their field and couldnt have been more welcoming. We will most definitely be back!!!

Amazingly curated selections everywhere else in the store: perfect spatula, perfect tongs, perfect knives... but the wine key are terrible. I think there were two kinds, both would be dismissed by serious wine folks. Get some laguiole in there and it is literally the perfect store.Thanks for the shopping adventure. Okay first off, I just accidentally deleted my tab and lost my first review so here goes again.. thats how much I loved this place.I am from Chicago and I was on a road trip to California. On the way, we stopped in Denver and I knew I had to come to this shop. A friend recommended it to me and wow I was impressed. Tina is a passionate, patient, and knowledgable person. After about an hour of her and I geeking out about knives, she started to show me some her favorites. We must have went through 20 - 25 knives and talked about what we liked and didnt like. After we narrowed it down to one knife, that I absolutely loved, I thought we were all done ready to go... but there is MORE. Tina brought out two more knifes of the same exact model to also try out.. She told me some of these knifes have subtle difference so she wanted to make sure I was 100% positive about this SPECIFIC knife. I am glad she did, because I have been using my knife for a few weeks and couldnt be happier. She gave me a ton of space and let me practice cutting with each knife on a board. This place has so much more than just knives, amazing kitchenware, cooking books, magazines, sharpening stones etc. They literally have all my favorite cookware there.. as soon as I walked in, I knew I wasnt leaving for a while ha.I would HIGHLY recommend anyone looking to have more fun cutting in the kitchen to stop by. Was recommended to go here if I needed knife sharpening from the current Chef of Red Square Euro Bistro (Chef Garron.... simply awesome). Walked in, was greeted with positivity, and much help. Any questions I asked they were promt with, was answered with full force. The price for industry people was phenomenal, I can’t stress that enough. I visited this establishment over a year ago and neglected to review it. However, both the quality of service from the owners and the selection of items in the store were exceptional so I am compelled to do this write up.Because I reserve love for humans, I will say that if this store were human, I would love it. I happened upon it because I needed to have my cheap Target/TJ Maxx/Walmart knives sharpened. When I picked them up, man, they were, um, razor sharp. I forgot the owners name, but he talked extensively to me about sharpening vs. honing, how to keep my knives honed at home, ceramic vs. metal honers, etc. (I actually already knew all this stuff, but played dumb to see if he knew it and he did!)Another time I called their store for (insert reason I have forgotten). I got no answer during business hours so I hung up and called back. Still no answer, but a weird soundy sound. The owner texted me: Sorry, were having phone issues today. What can I help you with? WHAT? A company that actually knows what it means to provide excellent customer service? Yall will have my business for life, yo.I will take my knives back today to have them sharpened again. Is it wrong/bad/weird that Im kinda stoked about it? No? Okay cool. Five starts well earned.
This is by far one of the best places Ive been to. They have most of what a chef could need. The knives are amazing quality and reasonably priced, and so are their sharpening stones. The only thing that I wished they had was the Shapton #1000 and #5000, but that isnt their fault due to company things going on with Shapton. However, they did have the Mizuyama #1000/#6000 combination stone which is what I purchased, along with Nagura and a few other things. Recommend this place over any other for stones and knives. 10/10 will keep coming to this store.
