My favorite butcher store in Seattle. Amazing meats and the guys always take time to recommend how to cook them. Got a long slow beef roast that my guests were blown away by. Tried their porchetta is was fantastic. Grilled their chicken and it was clearly much better quality than is available at high end Seattle stores. They have precooked Italian style ham (prosciutto cotto) that tasted better than when I had it last in Bologna.
Everything perishable in this store looked unfresh except the bratwurst so I asked for three of them. The worker took them from the back of the case. They were gray; unlike the fresh red-brown ones I thought I was buying. I decided to give them a try. While cooking they have off the smell of old meat. I had to throw them out.Never buy from this bait-and-switch butcher!
This is a long overdue review that I meant to post when I took the Bacon Class. I came to learn, but was more interested in eating. When I spoke to Kevin on the phone, he said there would be a lot of eating and bacon. He did not lie. He showed us the different cuts of meat they offer at the butcher shop, offered us different types of bacon he served up on the spot and the different pates they make in house. Everything was exceptional. He is a great instructor and very personable. I hope they offer more classes since the current ones are sold out. Take a class/dinner when theres a spot. You wont regret it.
T doesnt get much better than this local little store in Loyal Heights. This store is a combination butcher, fishmonger, bodega and mini farmers market.They have everything you need for a picnic if youre headed out, snacks, a great cut of meat or fresh seafood.The people are friendly and helpful, seeming to actually enjoy their jobs. This neighborhood and shop are a must visit when in Loyal Heights or Ballard.
Perfect shop for all your meat and charcuterie needs. Locally sourced meats, and very helpful staff. I just simply walked in (though you may want to call ahead just in case), and asked for 10 short ribs. They brought out the rack from the back, and Chris hacked away at it for me to produce 10 beautiful pieces that my clients raved about. 100% customer service here. I almost didnt want to leave a review, because it wont be a secret anymore! They even give classes and make their own sausages and dough for pâté.

Good quality and selection but WAY overpriced. Some staff are knowledgeable while others seem to be faking it. Twice I’ve been sold a cut of meat other than what I asked for. I wanted to like this place but given serious shortcomings I won’t shop here again. Too bad really, Seattle needs a great butcher. Unfortunately B&C is not a great butcher.
I really love Beast and Clever. I love meat and ideally I want it from smaller farms not meat factories. Everything I get there is local and I can feel good about that. He also sells delicious wine - no seriously. It also happens to be walking distance from my house.
Went out of my way to grab some steaks here this weekend. Picked up a sante Fe, picanha and wagyu ribeye. All were amazing and that ribeye was maybe the best steak Ive ever had. I also got some great advice on how to cook them from the woman behind the counter, even though there was a line. Thank you!
Glad to see that this very promising establishment just arrived in the neighborhood, very clean and charming spot that will offer lunches and sausage making classes in the near future, I had the chance to try their homemade paté and I have to say... delicious . Will definitely come back to try a lot more of their cut !

Only bought the filet mignon(tenderloin cut) and it was definitely 5 stars. I usually broil my steaks after letting them rest for 30 minutes and the thickness let me sear it on 4 sides for a total cooking time of 12 minutes in a cast iron.It turned out perfectly medium rare with pink throughout the whole steak.The quality stood up to my experience at Daniels broiler and the roommate said it was better than the 100 dollar steak he had at the metropolitan grill.I havent been to many other butchers in the area besides double dds meats, and I probably dont need to try anywhere else.This was very high quality and a wonderful experience.
Went for the steaks but stayed for the brisket. Everything weve bought was excellent and we cant stop coming back!
I was so excited to go to this local butcher. However, this morning I bought a 5.66 lb whole chicken for $45..... thats $8 a pound. I can understand paying a premium at a butcher, but not like this. I can also understand paying $8 per pound for only chicken breast... however, for a whole chicken, which is only 65-70% edible meat, this is a rip off. For reference, the national average price for a whole chicken is $1.28 per pound.

The epitome of a neighborhood butcher that soars above the competition. You can quite literally taste the difference of the offerings at Beast and Cleaver. Its not a budget butcher, but you get what you pay for. If they dont have what youre looking for, they can get it. If youre shopping early on a Saturday, do yourself a favor and get a sausage roll.....just do it.
A great addition to the neighborhood, knowledgeable and diverse in offerings. Staff are friendly and take the time to discuss cuts and ideas for their butchered goods. The quality of the meat and the price are above average, but I think this is indicative of the availability and source of the butchered animal.

Super super sad. I called in a week in advance to special order. Specifically asked for liver to make pate. Its a 45 minute drive from the Eastside to Ballard.Arrived and they subtly tried to give me kidney instead. No apologies, no phone call to say hey, we couldnt get you liver. Nothing, nada. and a subtle switch of the hands for kidney.No apologies, sorry for the inconvenience. More like were hip and it doesnt matter because we needed the liver for our own in house terrine.No thanks, never again. So sad, this was something I had actually scheduled out ahead of time to prepare for Lunar New Year. Ran to Uwajimaya and got it there instead.Deuces. Customer service was sh****
Much of the best meat Ive ever purchased has been from B&C. This is a group of people who are utterly committed to providing amazing meat, raised and processed using absolute best practices. The store is inviting, and the butchers go well out of their way to be helpful.
New to the neighborhood and delighted to find this place. You can basically call and order *ANY* cut of meat. I needed a whole 10lb bone in pork shoulder and figured it would take at least a couple days to get from their supplier but no, they had it. Seeing the inside of this place you dont even have to question the quality of anything. Great find.
An outstanding butcher, and as the owner is a chef you can get great advice on how to cook your purchase. Especially nice are the different and imaginative cuts, not the same old thing. And NOBODY has pork of the same quality! Pates and sausages also excellent.
The selection of various meat products is amazing! Sausages, Paté, Roast Beef, Pastrami, and so much more! My dog loves the dog treats too! I probably stop by at least twice a week, and there is always something new to try. You will never be disappointed with the steak selection as well. Id give them ten stars if I could.
These guys (and women) are wonderful! The meat (and wine, and maple syrup) quality is amazing. I particularly appreciate how quick they are to give ideas for how to cook different kinds of meat -- Ive frequently left with a cut Ive never cooked before, followed their simple directions, and ended up with a fantastic dish. Im lucky because I live close by, but theyre definitely worth a trip if you live farther away!
Cool fun to talk to the butcher from England. Great advice on meat to eat its a butcher shop so theres a lot of red meat but good sausages too and lamb. Might be a little pricey but well see how it cooks out.
Beast and Cleaver is an old school butcher using local farms and ranches to source their meat. It is how a person should buy meat, reminiscent of the butchers in Europe. Kevin, the owner, manager, and cleaver maestro was very patient with my obscure questions and requests. I’m a talker, schmoozer in New Yorkese, and maybe schmoozing isn’t common in his hometown of London. The shop was busy, but Kevin remained polite and welcoming.My chicken and beef tenderloin were very delicious. The pate, more of what I would call a terrine, was very dense and thick. It was tasty, but a bit too peppery for my wife and more dense than what I devour in France. Yet, I sliced it as thin as possible and enjoyed Beast and Cleaver’s Terrine de Maison. I shall return to purchase more of Kevin’s butchered meat. My protein diet needs good meat well butchered.

Huge addition to Ballard/Seattle. They care deeply about where they are sourcing their meat from and take the time to go through different options with what you can do with the meat or meats that match what your recipe or ideas are looking for. I’ve been lucky enough to be at a dinner and it is unreal - best experience in the city 🤘 my meals, especially Sunday lunches, will never be the same!

Wandered into to check out this new butcher in town and decided to try their British bangers. They were full of such amazing flavor! Reminded me of my semester abroad in Scotland...except it tasted even more fantastic! Look forward to trying their other products.

Incredible sausages. I took a poultry butchery class here and it was excellent. They have very local, top notch chicken and duck that I cant wait to buy for dinner.

The quality of meat here is exceptional. So far we have tried their Wagyu, Toro, Burgers, pate, and rabbit. The one bad thing about this place is that they constantly rotate their cuts, so if you want to repeat something you really liked it may not be available, but on the plus side, you get to try a new cut. I wont be buying my beef from anywhere else. The flavor is just so good, definitely worth the price point and supporting the local farmers.

Great selection and staff! In addition to the staples that one would expect, like ribeyes and NY strips, B&C carries more uncommon cuts that I havent ever seen in a grocery store. Furthermore they prepare food that not only looks delicious, but (to me) its new and interesting. I have been there multiple times and do not intend on stopping any time soon. Lastly, Ive found it easiest to keep up with their specials and events by following them on Instagram.
