I was looking for a unique coffee shop to go on about and work on some of my educational courses. I looked up Gypsy Javas and their reviews and menu selection sold me. I had their charcoal mocha (which I didnt even know that was possible), coming from a former coffee barista. Tried their Morning Birdie breakfast sandwich and it was delicious. Highly recommend this place to anyone, especially if youre looking for a friendly atmosphere and great customer service!
They have a rustic looking decor. I stopped for a takeout coffee and breakfast. Ordered the gypsy mocha with green chili, the quiche and a lemon poppyseed muffin. I loved the mocha. The green chili in the mocha was a perfect touch of spice. The quiche was decent and quite filling. The pesto sauce with it was absolutely delicious. The muffin was ok. I am not one for a sweet tooth, but it def needed more lemon in it. Overall its ok. The inside doesnt have much lighting so would recommend sitting outside.
The americano coffee I ordered had an extraordinarily delicious flavor and the woman who served it to me was very nice to talk to. I went there to read a book and unfortunately the light above the table was not very good. I read anyhow and somehow I survived. Cant think of any other way to evaluate this place.
Excellent service; freshly made baked goods which has half of the display case dedicated to gluten free options; vegan/ vegetarian food options for breakfast or lunch; variety of teas and coffee flavorings . My fave of faves is the cauliflower wrap with a Mediterranean flavor, add feta and have it pressed for extra flavoring. Look for specialty drinks such as Tumeric or charcoal lattes
Everything was amazing! I wish I could’ve tried some of the pastries but I was too full. They looked amazing so I would come prepared to try them if you are feeling adventurous. I can’t have caffeine so I usually have to settle when the group goes to coffee shop. However I ordered the hot cocoa and it’s the best hot chocolate I’ve ever ordered out! Not too sweet and very chocolatey. I also loved the latte art, it made it very special
Wonderful experience every time I’m here. The staff is amazing and always helpful. All of their beverages are made with care and never disappoints. Awesome selection of sandwiches and bakery items if you’re hungry. An excellent place to sit down for study time or hang out with friends. Try their turmeric latte 😉
I tried the Gypsy Mocha, and from the first sip, could taste about fifteen different flavors in this coffee! Some of the best, Ive ever had. Thats saying, a lot. Please, try this little gem of a place!
Well worth pulling off I-25 for a spot of awesome classic java, but the LATTE ART is literall ART. See pictures. Currently serving out of to-go cups but that doesn’t stop them from having the best latte art I’ve seen and I make a point to stop at as many coffee shops as possible when vacationing. Hot chocolate was latte style and tasted like pure melted chocolate chips. Gorgeous. They also had super cool seasonal syrups that I forgot to photo, like butterbeer.
Look, Im not a coffee shop kinda guy, but this little place was awesome. Super friendly, great atmosphere, great coffee. Their house baked goods are excellent too, loved the coffee cake! Really interesting decor, gives a victorian industrial feel almost, with a bit of a twist. If Im ever going back through Pueblo, Ill be stopping by again!
Most of the drinks are amazing and the food is super good too! But the drinks aren’t always mixed well. I’ve had it happen several times now with the hot coco where there was a bunch of power not mixed in on the bottom. But so far that’s the only issue. Otherwise great atmosphere and great place to meet with friends!
It was an accident we found this little gem. We had the rose latte with a couple of bagels. The coffee was absolutely delicious. I could not have asked for anything more. The sandwiches were not as good as I would have expected given the coffee, but the bagel it was on was very good. I had salmon on my bagel and although the flavor was good I wish there was more of the spread. All together it was an enjoyable experience. Cute little building too.

Positively DELIGHTFUL! The inside of the coffee shop is absolutely charming and the ladies (one of whom I now know is the owner), were very friendly and helpful. I asked what their best coffee was and instead of giving me a robotic answer of just reading off what they have, she took the time to find out what TYPE of coffee I like. Once I told her, her suggestion was spot-on! Perfect tempurature, and perfect amount of sweetness, it is one of the best cups of coffee I have had outside of making it myself at home. I also ordered a breakfast burrito and a breakfast bagel. The breakfast burrito was awesome. Great amount of egg, perfect amount of hash browns, bacon and chili. Then it was warmed and placed into what I believe to be a panini press. It gave it an awesome crunchy grilled outside...or to quote an old timey commercial the lines taste good! The bagel was mouth watering!This is DEFINITELY NOT your run-of-the-mill coffee shops! Ive been in Colorado for 4 years now and have been to a LOT of coffee shops where I come from....I must say that Gypsy Java is certainly one of the BEST I have been to. Atmosphere, baked goods, breakfast goods and above all else, CUSTOMER SERVICE! I didnt just visit a coffee shop this morning, I felt that I had visited a friends house and enjoyed some good conversation and great coffee. I have certainly found my go-to place now for coffee in Pueblo. Thanks ladies!
Called order in, received prompt and courteous service. Order was ready within minutes, cafe was uniquely decorated and tasteful. Employees seem to enjoy themselves and are happy to take care of their customers. Very personable and fun to talk to. Ordered a dirty chai latte and was absolutely blown away to taste ACTUAL chai spices. So strong. So good. Great pairing with their espresso. Will visit again when were in Pueblo again.
Gluten free blt was awesome! Coffee was great and a friendly and chill environment. Visiting new family-friendly not from pueblo, but will be back next time!
My experience was great. They certainly know what they are doing. We love the fact that they now serve top shelf CBD products to customers. Staff/owners are nice and very professional! Yummy coffee, teas and pastries. Love 😊. I give them a 10✴️

I love their tropical fruit smoothy! Its so refreshing. I recommend the Sassy Turkey sandwich for a bite, but honestly, everything they do is delicious. The bagels, wraps, salads and muffins are always fresh. As for coffee, the selection is vast and flavorful. The staff is super attentive and all around cool AF. Even if its your first time there, theyll treat you like a regular. I enjoy the size of the locale and the couch/sitting area in the back for reading and meetings.

This is a gem. We were driving through and stopped for some yummy breakfast and good coffee. We got both and found a lovely staff and owner as well. Will definitely be stopping back by the next time we drive through Pueblo.
We were coming thru Pueblo, it was my wife’s birthday, I reached out to them for a special order... and boy did they deliver!! She surprised us with a chocolate cake with espresso cream cheese frosting!! It was awesome!! The gypsy club and sassy club were outstanding!! The coffee was great, and the atmosphere made our little trip!! Will definitely come by every time we are in Pueblo!!

Nice, little, comfy place to have coffee with a friend. Its not a very big place and kind of noisy even when sitting in the back. Three thing I liked the least was the employee taking our order. I had never been to this place and she seemed inconvenienced that she had to explain anything to me and didnt just quickly order.
Went here for the first time this morning. Without a doubt the BEST espresso in Pueblo. Without a doubt the BEST latte in Pueblo. Perfect temperature. Perfect balance of espresso to foam. Great flavor from the espresso. Had a cranberry-orange muffin and it was very good. Great texture. Perfect balance of cranberry to orange and the coarse sugar on top adds just the right amount of sweetness to cut through the bitterness of the cranberries. Everything here is made with love. I’m excited to go back and try other menu items.

Friendly staff, however its all about the espresso. The espresso is just not good. Very bitter. About as bitter as Starbucks. Wouldnt buy again. 3 stars for service tho.

Love this place! Atmosphere is super cool, in a old building near downtown Pueblo. Nearly everything is made from scratch including the coffee syrups which are delicious! Id recommend a pastry and coffee, then find a spot in the area upstairs and enjoy!

I dont like nor drink coffee, so I ordered the turmeric latte form the Not Coffee menu. When I took it back because my order tasted like coffee, the barista commented well, yeah, its a latte. Apparently the drinks on the not coffee menu are made with coffee. My water was good.

Lovely little spot with scrumptious desserts & coffee (or hot choclate if you dont drink coffee!). The Aztec cookie is worth lying to the cashier about getting a 2nd cookie for your spouse only to eat both cookies once returning to your vehicle. They gave us a free cinnamon roll and we cherish it to this very day.

I love this coffee shop! The coffee is amazing as well as the food. They are always coming up with new items that are healthy and delicious and include vegan and gluten free options. The owners are so great as well as all the staff.
Maybe the third time will be the charm but to be honest I’ve been extremely disappointed with the coffee both times I’ve gone here.
Awesome customer service and delightful food choices
I wanted to support local small businesses once a pay check so I checked out Gypsy Javas as I have seen on Facebook mentioning of vegan options and went for the vegan burrito. Also got a small light roast coffee with a bit of oatmilk creamer, sipped, enjoyed the asthetic and atmosphere of this roasted bean brewery establishment as I awaited my burrito. The coffee was indeed a light roast as I could taste the full flavors of the mostly raw antioxidants in the brew. The oat milk mixed well with my light roast coffee and any sugar would have just been a distraction from the subtle notes and sutain of an amazing cup. The burrito had it all... almost. It just needed a sauce or maybe some Pueblo green chili in it as it could be perceived to be on the dry side with just a few roasted and moist peppers to help. Still a delicious and very filling burrito but Ill be sure to get or bring my own hot sauce. Overall a really great experience and I will be back for the vegan donuts!! Lots more to try and I cant imagine the quality of the food or customer service dipping down anytime soon as I was treated like a friend here. Thank you Gypsy Javas and see you again!
First time trying! I love the whole vibe of the place. Never heard of a coffee shake back in pa and Im glad I decided to try. It was super delicious, I added mocha and caramel, amazing 😍 Gave me lots of energy too! Also tried a mixed berry scone and it was my first time trying a scone, another good choice! Thank you!

I love this place! The atmosphere, the food, the coffee.. Its all wonderful. The service is also very friendly and helpful, I think it totally comes across that these ladies love what they do! I love that the sitting area in the back has a place for kids to play. As a mom to a 2 year old, I find it very helpful to have a place for both myself and my baby to enjoy time.

A great place for a hot drink. Kids (and adults) can enjoy their hot chocolate Gypsy style, with cinnamon and cayenne for extra flavor. Theyre open until 5pm every day, with lunch sandwiches available for a quick bite as well. The look is very eclectic, with unmatching chairs and tables scattered through narrow walkways around the shop, giving it a lived-in, cozy feel.
Visiting from Colorado Springs for the day while our teen attends an event at the university, we were looking for a good coffee place to have breakfast. Im always looking for good keto breakfasts, and have gotten disappointed by coffee shops. Not here. These guys are amazing. We still be back.
I returned to Gypsy yesterday with their new welcoming and dine-in experience since COVID closing. I met the owner (name?) and had some delicious french roast brew and a cookie. I read my book and noticed a few WiFi people but well spaced from me. Very clean restaurant. Ill be back. Theyre open til 5pm everyday but I will have to plan their hours around the bus. I live closer to Starbucks at Pueblo blvd and Northern (81005) but happy to give Gypsy (I gave Gypsy a plug on the local Starbucks website) my business since Starbucks STILL is without dine-in: Before Starbucks there was life: my life! Thanks again Gypsy Java.
Came to town for an interview and was brought to this lovely spot on the way back. Not only was I blown away by the fresh roasted beans and fresh baked goods, just saying plain and simple, this place has Excellent espresso! The beans are roasted in Denver. The house made cookies are delicious, especially the Aztec cookie! Definitely need to try the pumpkin whoopie pie as well!! So Yummy!!! This place definitely adds a plus to Pueblos local coffee shop scene. Great open seating in back and cool, local handmade ceramic coffee mugs for sale as well.

The food and drinks are tasty, but the service is too slow for it to be worth it. Today I ordered a drink, there were only three other customers in the store, and I waited 16 minutes for the drink.Probably wont be visiting again. Its a shame... they do make good coffee!

Local coffee shop in Pueblo and open early. Lot of locals come here, business and community. Specialty drinks, some breakfast entrees and some pastries. It is cramp/cozy in front, left meeting area in the back and outdoor seating. Staffed enough to be able to handle the crowd and also bring out the food.
