Happened to stroll into this place unexpectedly as I was in the area. Absolutely stunning collection of knives the gentlemen who work here had alot of knowledge of the knives and even offered me to look at some. I had to resist temptation of buying one I was very close. Theyre all so cool.

Fantastic experience! This locally owned business was started over a decade ago. Referred to as “The Knife Guys” by their family and friends. They took a keen interest into all components of the knife from a culinary perspective. This place is literally a knife museum. There are between 500-700 knives for purchase at any given time. Come in and they will take great care in helping you pick the knife that is correct for you in the right price range.Knife sharpening- Thumbs up on pricing!!Don’t be afraid of sharp knives. Dull ones are a hazard. Home cooks on average get their knives sharpened 2-3 times a year. Professional chefs sharpen once a week.They have a 24 hour turn around time and do an amazing job. You’ll be happy you brought your knives in here.

Went in yesterday as a novice looking to up my game for the first time. The gentleman inside was really helpful and had no problems answering any questions i had. Really solid place/variety, great service, and knowledgable staff. Ill make sure to come back for anything else a may need.

Holy cow--these folks are GREAT. Always ready to share their knowledge (which is a lot), fantastic selection, and Ive never been steered wrong. Early on, they recommended a very inexpensive Japanese carbon steel knife. They could have easily tried to up-sell me, but they did not. It has been a great knife. When I was ready to splurge a bit more on a fancier knife, they again had great advice AND great a great price. Substantially lower price than all the web based Japanese knife retailers Ive seen--and you have the advantage of handling the knives and getting their personal service, which is invaluable. Some specialty shops can be snobs, but not this place. Very much into what they do and what they sell, but very friendly and you dont have to be a famous chef to get great service. I cant say enough positive things about all the folks at this place and my experiences.

Picked up a benchmade 940 Osborne I love it!I got there and they had no 940s in the case I was was slightly disappointed almost got the display 941 but the guy was super cool he texted his boss because he knew I was looking for a 940 and his boss told him they had got some in and they were in the back he returned to me with a 940! I will forever be loyal to these guys because of how cool they are.

Excellent knife shop and even better sharpening shop in Portland. The prices are fair (no need to go to the internet), and the knife sharpening class was lots of fun. Highly recomended. Unlike many stores,t hey are not trying to sell you the most expensive stuff that you do not need.

Really nice shop with helpful and knowledgeable people. I would suggest that anybody who likes to cook go take a look at some knives there. Having better knives has transformed my cooking experience. For under $75 you can get a knife that will likely out-cut anything youve ever used before. For a little more you can get a knife that will amaze you. Sounds expensive until you realize they last a lifetime and will transform your cooking experience.Their sharpening class taught me how to maintain my knifes and gave me the confidence to do so.The dull clunkers most of use as kitchen knives will fell like boat anchors after you try some knives from this shop.

This most premier kitchen knife store in the world, I havent seen any other store match the selection, real world expertise and sharpening experience on freehand waterstones in one place. They are too humble to admit it.I saw Korin in New York which is the most famous of these kinds of cutlery shops. It didnt come close, they didnt have as much selection and the sales staff didnt have as much real world kitchen experience as the Portland Knife House. It is an important destination for folks visting from out of town and great place for gifts or to learn about knives from talking to friendly staff.

Super helpful staff, this is my second time here to get a quality upgrade. They gave me 5-7 options in 2 different styles of knives I was looking for; they described the differences between better to best within each class. Answered all my questions, even if I haughty hey might be kinda stupid. Point is, they let me take my time choosing the right knife for me while giving me the proper information to make an informed decision. Customer for life! Thanks guys!!

An expertly curated collection of knives. Most all from Japanese makers, as we all know that Japanese makers are the best. They dont honor their return policy.I went in and selected a $360 chefs knife. They only had a display model in stock, but the sales person assured me that it was just as good as a new knife.I took it home and tried to cut some mushrooms and tomatoes. I was disappointed to find that my new expensive knife did not seem very sharp. In fact, my $40 Victorinox knife from Amazon did a much better job.I took the knife back, in its original condition and packaging, within their stated 14-day return period. They refused to take it back, saying they dont take back used knives and that the knife I was trying to return had edge damage (Hello! It had edge damage because it was a display model!)If you buy a knife here, consider the sale final.

I’ve traveled from Troutdale to here every time and I’ve been about 4 times and if your a cool looking for a good knife store with the best and friendly staff this place is heaven, they will line up all the knives you put as a description as u want and give you all the info on each knife and they are never rude I mean it’s not that expensive if your going to buy a chef knife the top price I kept going around was $400 but they had knives for $100 -$400 and they were all awesome. They also make knives in the back and sharpen them an it’s just an amazing place especially to be able to hold the knives instead of getting them online this place is amazing check it out 10/5 stars

This is a review of the knife sharpening class, not the sales side of the business.To start, let me say that it costs $150 so that may put some off. I use my knives every day, starting with garlic for my omelet in the morning, to sofrito for tomato soup at night. I have a couple of nice knives, but I was afraid to sharpen them. So I took this class.Here is what it did for me:Gave me the confidence that with some practice I can sharpen my best knife. Not today, but after Ive practiced on everything else. But I know I can do it now.Gave me the confidence to realize that I dont have to spend major bucks to have a great knife--rather, I need to know how to maintain the edge I need for the work I do--and this class showed me that with good technique I can have a $35 knife slice as smoothly and accurately as a $200 knife. The difference is in how long the edge lasts and the work to maintain it. But if you are on a budget and know how to work, this class will show you how to make the knife work for you.Some other conclusions:If you care about what you cook, the nutrition and the appearance and the texture, you need to know how to maintain the tools that will get you there. This class seriously does that.People who are just starting out, young people starting to cook for themselves, should take this class because it will give them a basic life skill that will add immeasurably to their enjoyment of food and cooking wherever they may find themselves (life skill, right?).The guys at the shop are great teachers, patient and very attentive and very nice. They said to come back yall if you need help and they meant it. I learned a lot from them. Totally, totally worth the cost.

I recently purchased an awesome, swanky, fancy-donkey (I would say fancy-ASS, instead, but thats vulgar...which is why I choose to utilize the suffix -donkey in lieu of ass) 300 dollar folding knife of very premium steel. I felt that -out of the box- the knife was merely adequately-sharp but not razor-sharp -which is how I expect new knives to be, especially expensive knives.About a week ago I brought my knife in to Hawthorne Cutlery to see if they would sharpen my new knife. They indicated to me they would sharpen it and told me to come back later that day to pick the knife up. When I returned later that day, however, they told me that the knife was ALREADY razor sharp...hence they had no ability or desire to try and make the knife any sharper than it already was. I was a little disappointed and irked because I felt like the knife...somehow wasnt as sharp as it could and should be.A couple days ago I attempted to get a second opinion by bringing my knife into the Portland Knife House. The sharpener from this store took a look at it and immediately felt that the knife could be somewhat sharper. Mind you, the knife has a premium steel and is recurved which means sharpening my knife is UBER-difficult anyways -it would take an expert to do so.I very recently returned to Portland Knife House and picked up the knife. They did sharpen it -for an INEXPENSIVE fee- and did an absolutely professional AWESOME job. Obviously they have a keener eye and are more legit than Hawthorne Cutlery -given that they felt the knife could be sharper and did an impeccable and immaculate job on it.Highly recommended.

Chefs, aspiring chefs, and foodies rejoice! This is the place to go if you need to butcher a herd of cattle. Razor sharp Japanese kitchen knives about here and the staff is both knowledgeable and friendly. Nothing ruins cooking more quickly than dull knives and there are enough amazing values here that you have no excuse not to outfit your kitchen properly. Forget you Henckels and Wusthofs, no need to waste money on Globals, buy here and get sharp knives that will last a lifetime. They also sharpen knives so stop mutilating the ones you have and leave it to someone with the tools and experience to ensure youve got knives that will cut!

Great shop. Another one of those dang, why didnt I think of opening this? businesses. Eytan is very knowledgeable and the selection is outstanding (japanese and local producers). He was a restaurant cook so knows the ropes of how to use and maintain a knife in the kitchen.Be prepared to discuss and learn. He has knives of many styles and price points, so there is likely something for your budget here. He and his wife are also very friendly -- no hipster service issues here! Yay. They recently moved here from Phoenix and still have a shop there.I havent taken advantage of his sharpening services, but I am taking a sharpening class there soon that I am looking forward to.
